Ingredients:
- 1 tsp Avocado Oil
- 2 Tbsp Garlic
- 2 Tbsp Ginger
- 1 Chicken Breasts (4)
- 4 Cups Ramen Broth (4)
- 3 1/2 Cups Water
- 2 Sopporo Ichiban Ramen Packs (31)
- 4 Cups Bok Choy chopped
- 1 Cup Carrots shredded
- 1 Cup Bean Sprouts
- 1/2 Cup Green Onions chopped
- 2 Soft Boiled Eggs (4)
Step By Step:
- Using the sauté function on your instant pot, heat up the avocado oil. Add garlic and ginger and sauté for about 3 minutes. Turn off sauté function.
- Add chicken, broth, water, and seasoning packets from Ramen packs to IP.
- Put lid on IP. Set to High for 30 minutes.
- While your IP is working. Prep the remaining items (clean and chop bok choy, shred carrots, dice onions).
- Using a small pot, boil water. When the water is at a rapid boil turn down to a slow boil. Gently place the 2 eggs into the pot. Boil for 5 to 6 minutes. Turn off water after 5 minutes and let eggs sit in the water for 10 minutes. Carefully remove the eggs and place into an ice bath. Peel eggs and set aside.
- Quick release your IP when the time is up. Turn on the sauté function on low. Pull the chicken out of the IP with silicon tong and shred. Put chicken back into IP.
- Place noodles into the IP and place the lid over for 3 minutes.
- Add bok choy, bean sprouts, and carrots. Cook 5 more minutes until the vegetables are cooked.
- Turn off IP. Using tongs and a ladle to serve.
- Garnish with eggs and green onions.
