Fannie Mae Fudge

Ingredients:
  • 4 cups sugar
  • 1 cup 1% milk
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 1 cup unsalted butter
  • 13 ounces semi-sweet chocolate chips
  • 13 ounces milk chocolate chips
  • 2 ounces Bakers unsweetened chocolate
Step by Step Instructions:
  1. Add the milk, butter, and vanilla into a medium-sized pot with the burner on medium/low.  Once the butter melts, add the sugar.  Bring to a boil and boil 2 minutes while stirring constantly making sure the sugar does not stick to the sides of the pot. 
  2. Turn off the heat, add the marshmallows (1 cup at a time) while mixing to make sure the marshmallows are melted and combined. 
  3. Break up the Bakers unsweetened chocolate and place in a heat resistance bowl.  Add the semi-sweet and milk chocolates to the bowl.  Pour the hot sugar mixture over the chocolate.  Let sit for 2 minutes. 
  4. Using a handheld mixer, mix on medium until consistency is smooth.
  5. Spread into a large, parchment paper covered cookie sheet.  
  6. Put cookie sheet into the refrigerator overnight. 
  7. When you are ready to cut the fudge, use the parchment paper to remove fudge from pan.  Cut into 1" by 1" squares.  Store in a airtight container until ready to use. 

Makes 5 lbs. 
Tips: Great gift for the holidays.  I use mason jars and seal the fudge.  Tie with a ribbon or a bow and enjoy.
HINTS: Use real butter.  No substitutes.
