Fannie Mae Fudge
Makes 5 lbs.
Ingredients:
- 4 cups sugar
- 1 cup 1% milk
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
- 1 cup unsalted butter
- 13 ounces semi-sweet chocolate chips
- 13 ounces milk chocolate chips
- 2 ounces Bakers unsweetened chocolate
Step by Step Instructions:
- Add the milk, butter, and vanilla into a medium-sized pot with the burner on medium/low. Once the butter melts, add the sugar. Bring to a boil and boil 2 minutes while stirring constantly making sure the sugar does not stick to the sides of the pot.
- Turn off the heat, add the marshmallows (1 cup at a time) while mixing to make sure the marshmallows are melted and combined.
- Break up the Bakers unsweetened chocolate and place in a heat resistance bowl. Add the semi-sweet and milk chocolates to the bowl. Pour the hot sugar mixture over the chocolate. Let sit for 2 minutes.
- Using a handheld mixer, mix on medium until consistency is smooth.
- Spread into a large, parchment paper covered cookie sheet.
- Put cookie sheet into the refrigerator overnight.
- When you are ready to cut the fudge, use the parchment paper to remove fudge from pan. Cut into 1" by 1" squares. Store in a airtight container until ready to use.
Makes 5 lbs.
Tips: Great gift for the holidays. I use mason jars and seal the fudge. Tie with a ribbon or a bow and enjoy.
HINTS: Use real butter. No substitutes.
