Skinny Banana Bread Green Plan: 2 Smarties Per Serving • Servings: 10 Ingredients: • 3 Bananas (0) • 1/2 Cup Unsweetened Applesauce (0) • 9 tsp Truvia (0) • 3/4 Cup All Purpose Flour (9) • 1/2 Cup Wheat Flour (6) • 1/2 tsp salt (0) • 1 1/2 tsp baking soda Step By Step: 1. Preheat oven to 375º 2. Mix bananas, applesauce, and Truvia with a hand mixer. 3. Add all dry ingredients and mix until combined. 4. Pour batter into a loaf pan lined with parchment paper. 5. Bake for 45-60 minutes until toothpick comes out clean.

Zucchini Spaghetti with Tomato Sauce

This is an easy, healthy alternative to a pasta dish. If you would like to, you could add grilled chicken or shrimp. Ingredients: - 5 zucchinis - 1 small red onion - 1 yellow bell pepper - 2 Roma tomatoes - Can of diced tomatoes - 5 cloves of garlic minced - Olive oil - Salt and pepper - Garlic and herb Mrs. Dash Using a julienne peeler, Peel all five zucchinis into spaghetti strips. Put into a strainer and salt. Let water drain for 30 minutes. Rinse and pat dry with paper towels. Dice red onion, tomatoes, bell peppers and set aside in a separate bowl. Mince all cloves of garlic and add to the bowl. Open can of diced tomatoes and drain. With heat on medium low, but zucchini spaghetti in and cook stirring occasionally for two minutes. Muffin Tin Eggs Green Plan: 1 smartie per serving • Servings: 12 Ingredients: 1/2 Cup Onion (0 SP) 1/2 Cup Green Pepper (0 SP) 6 tsp Salsa (0 SP) 8 Eggs (8 SP) Step by Step: Preheat oven to 350°. Dice onion and green pepper. Sauté onions and green peppers with cooking spray for approximately 5 minutes. Spray a muffin tin with cooking spray. Scoop onions and green peppers evenly distributed into the tin. Add a tsp of salsa to 6 of the openings on top of the onion and pepper mix. Whisk all eggs with a splash of water. Salt and pepper to taste. Pour egg mix into each tin (3/4 full). Bake for 20 minutes.
