Stuffed Poblano Peppers

4 Poblano Peppers
1 Jalapeño Diced
1 Tomato Diced
1 Green Pepper Diced
1/2 Cup Black Beans
1/4 Chipotle Hummus

In a skillet cook the tomato, green pepper, and jalapeño. Salt, pepper, and garlic powder to taste.

Mix with black beans and hummus. Stuff each pepper.



Bake at 400 degrees for approximately 10 minutes.

Top with cheese if desired.
